  1. always start with a clean Chemex coffee maker
  2. open a Chemex paper filter cone so that it is 3-ply on one side and single-ply on the other, and place it in the Chemex with the 3-ply side aligned with the spout
  3. pre-rinse the filter with heated water to rinse away any paper taste; dump the rinse water out carefully and reinsert the rinsed paper filter
  4. weigh out 29 grams of coffee and grind it on the coarsest setting
  5. place the Chemex on a gram scale and tare; add the coffee to the bottom of the filter cone, double-check the amount is 29 g, level out the bed of coffee and re-zero the scale
  6. 0:00pour 150 grams of heated water over the coffee in concentric circles to wet the entire bed of coffee; the pouring part of the bloom phase should take no longer than 30 seconds150 g
  7. 1:20pour the remaining water, using the force of the pour to create a slight bit of circular agitation and distributing it evenly; stop pouring at a total of 450 g450 g
  8. once the water level has depleted halfway, lift out the filter and reintegrate any coffee left up on the sides of the filter, then return the filter to the Chemex
